Kulfi

Ingredients:
- 2 cups full-fat milk
- 1/2 cup condensed milk
- 1/4 cup sugar (adjust to taste)
- 1/2 cup khoya (reduced milk solids)
- 1/4 cup chopped nuts (almonds, pistachios)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands, soaked in 1 tablespoon warm milk
- 1 tablespoon cornflour (optional, for thickness)
Instructions:
Prepare the Milk Mixture:- In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat and simmer, stirring continuously until it reduces to about half.
- Add condensed milk, sugar, khoya, chopped nuts, cardamom powder, and saffron-soaked milk. Stir well.
- If you prefer a thicker consistency, mix cornflour with a little water to make a paste. Add it to the milk mixture and continue cooking until it thickens.
- Allow the mixture to cool to room temperature.
- Pour the cooled mixture into kulfi molds or small cups. Insert sticks or cover with lids.
- Freeze for at least 6 hours or overnight until the kulfi is set.
- Before serving, run the molds or cups under warm water for a few seconds to help release the kulfi. Serve chilled.
