Instructions:

Roast Besan in Ghee:
In a separate heavy-bottomed pan, heat ghee. Add besan and roast it on low to medium heat, stirring continuously to avoid lumps.
Combine Besan and Sugar Syrup:
Once the besan is well-roasted and releases a nutty aroma, slowly add the sugar syrup to the besan, stirring continuously to avoid lumps.
Cook the Mixture:
Keep stirring the mixture over medium heat. As it thickens and starts to leave the sides of the pan, add ghee in small batches, continuing to stir.
Set in a Tray:
When the mixture reaches a halwa-like consistency and ghee starts separating, transfer it to a greased tray or plate. Level the mixture with a spatula.
Cool and Cut:
Allow Mysore Pak to cool for a few minutes but cut it into squares or diamonds while it is still warm.
