Ingredients:
- 1 cup besan (gram flour)
- 1 cup ghee (clarified butter)
- 1 cup sugar
- 1/4 cup water

Instructions:
Prepare the Sugar Syrup:- In a saucepan, combine sugar and water. Heat the mixture to make a sugar syrup. Bring it to a boil, then simmer until it reaches a one-string consistency. Add cardamom powder and set aside.
- In a separate heavy-bottomed pan, heat ghee. Add besan and roast it on low to medium heat, stirring continuously to avoid lumps.
- Once the besan is well-roasted and releases a nutty aroma, slowly add the sugar syrup to the besan, stirring continuously to avoid lumps.
- Keep stirring the mixture over medium heat. As it thickens and starts to leave the sides of the pan, add ghee in small batches, continuing to stir.
- When the mixture reaches a halwa-like consistency and ghee starts separating, transfer it to a greased tray or plate. Level the mixture with a spatula.
- Allow Mysore Pak to cool for a few minutes but cut it into squares or diamonds while it is still warm.
