Ingredients:
- 500 grams of grated carrots

- 1/2 teaspoon of cardamom powder

Instructions:
- Wash, peel, and grate the carrots finely.
- Heat ghee in a heavy-bottomed pan. Add the grated carrots and sauté on medium heat until the raw smell disappears.
- Pour in the milk and stir well. Allow the mixture to come to a boil.
- Reduce the heat to low and simmer, stirring occasionally. Cook until the carrots are soft and the milk has reduced significantly.
- Add sugar to the mixture. Continue to cook on low heat, stirring continuously to avoid sticking to the bottom.
- Add cardamom powder and saffron strands. Mix well to infuse the flavors.
- In a separate pan, lightly roast the chopped nuts in ghee until they turn golden. Add the nuts to the halwa and mix.
- Continue to cook until the halwa reaches a thick, pudding-like consistency and the ghee starts to separate from the mixture.
- Garnish with more chopped nuts and raisins if desired.
- Serve Gajar ka Halwa warm. It can be enjoyed on its own or with a scoop of vanilla ice cream.
